Chocolate Coconut Balls

As a mom, preparing snacks for my twins has always been a challenge. To be honest at times I didn’t want to be out with them during their meal or snack times , because I couldn’t think of what was easy to take on the go that was actually nutritious. I knew I couldn’t avoid this forever , so I started to think of different ideas of yummy, fulfilling snacks for both me and my kids. 

Chocolate coconut balls are great because they can be stored at room temperature , are a great sweet snack for the little ones and are easy to eat. 

Plus let’s not forget about all the goodness inside :
⁃ Coconut- vitamin B, fiber, good fats, iron, zinc
⁃ Cocoa powder- antioxidants
⁃ Oats-vitamin B, iron, fiber

Ingredients

Amount: 20 balls

1 1/4 cups grounded oats

1 cup unsweetened coconut flakes

1/2 cup unsweetened cacao powder

6 tablespoons plant based milk

6 tablespoons maple syrup/honey

Garnishing

1/4 cup unsweetened coconut flakes

Directions

  • In a bowl, mix all the ingredients together except the milk.

  • Slowly add the milk till a soft dough forms. If it is still crumbly,add some extra milk.

  • Roll a tablespoon of the dough into a ball. 

  • Take a bowl with the 1/4 cup coconut flakes and roll the ball in it for garnishing.

  • Refrigerated for a hour and then keep in room temperature for a hour before serving. Can be kept in room temperature for 3 days
